rhubarb + cardamom jam

Yorkshire forced rhubarb + cardamom is cooked with a little lemon juice and sugar to create this deliciously light and fruity jam. Perfect on rice pudding, greek yoghurt, or over ice cream. 

This jam is loose in texture as rhubarb is naturally low in pectin.
